Mady is made via the Metodo Ancestrale (ancestral method), which is the oldest known method to make sparkling wine. This winemaking technique involves bottling wine partway through its primary fermentation to trap the carbon dioxide gas in the bottle, creating gentle bubbles. Unfiltered, aged for 6 months on the lees and not disgorged, Mady is made in the most natural way. The result is a lively and savoury wine with quince and bread yeast flavours. Very refreshing and perfect for your garden parties.
