Tasting notes:
The fruit is hand-harvested, 100% destemmed, crushed lightly and given 5-7 days of cold (10C) maceration prior to fermentation. The total cuvaison typically lasts 18-21 days followed by ageing for 15-18 months in French oak barrels (20-25% new). The domaine owns 1.17 hectares of this fine vineyard that lies below the Nuits premier cru of Les Roncières. Much of it is classified as Nuits Saint Georges but the Chevillon vines are in the lower section and only allowed the Bourgogne appellation. Ripe and stylish with open, red cherry and raspberry fruit and a hint of oak. Fresh and succulent on the palate and harmonious on the finish.

Claire Chevillon and Philippe Chezeaux are the 5th generation to run their share of the Chevillon family vines. Prior to 2000 the estate was known as Domaine Michel Chevillon (Claire’s father). Today the property extends over 8 hectares including nearly 2 hectares of five Nuits premiers crus. Philippe is responsible for the wine-making which remains largely traditional.
