Sourced from limestone, clay and flint soils. Fermented with indigenous yeasts and aged on the lees to add concentration and complexity to the wine. Complex with citrus aromas and notes of minerals. Intense on the palate with a lot of character and some structure well-balanced with a well-integrated acidity and a mineral finish.

Producer description:

Maison Pascal Jolivet dates back to 1926 when Louis and Lucien Jolivet, both previously cellar masters at Château de Tracy, decided to make their own wines. Third generation Pascal, created the current brand in the 1980s. He now owns 120 hectares of vineyards between Sancerre and Pouilly sur Loire. Over the years, Pascal has developed a real style for his wines, which are enjoyed for their authenticity, purity and elegance.
